Why Chef Trousers Are a Safety Decision, Not Just an Image One
In an active professional kitchen — with hobs, ovens, deep-fryers and griddles operating simultaneously — the worker is exposed to burn risks from oil or boiling water splashes at a frequency that has no equivalent in any other area of the hotel or restaurant. The trousers they are wearing at that moment are not just a work garment: they are the first line of protection for their legs against those splashes.
Suitable chef trousers must fulfil two basic safety functions:
Not melt or adhere to the skin. This is the critical difference between cotton and polyester in heat environments. Polyester melts at relatively low temperatures and can stick to the skin on contact with hot oil or flame, dramatically worsening a burn injury. Cotton simply scorches and pulls away. For kitchens with an active hot line, cotton or cotton-predominant blends are not an aesthetic recommendation: they are an occupational safety measure.
Slow the penetration of heat. A higher-weight fabric acts as a barrier that slows heat transmission to the skin, giving the worker time to move the garment away before the burn becomes deep.
Types of Chef Trousers
Classic Checked Chef Trousers
The checked chef trouser — the famous black and white houndstooth or chequered pattern, or in other colours — is the iconic model of the professional kitchen. Its checked design has a historically practical function: it conceals the small grease and sauce splashes that inevitably occur during work, maintaining a more presentable appearance than an equivalent plain trouser throughout the entire service.
It is the most common model in traditional kitchens and establishments with classic brigades. The cut is usually loose to allow freedom of movement and ventilation, which is particularly relevant in kitchens with high ambient temperature.
Plain Chef Trousers
Plain chef trousers — in black, grey or corporate colours — have gained ground in kitchens with a more modern concept or in establishments where the kitchen is visible to customers. They offer a more contemporary appearance than checked trousers but show stains more readily during service.
Technical Chef Trousers
Technical chef trousers incorporate fabrics specifically designed for professional kitchen environments: water-repellent treatments that allow liquid splashes to slide off before penetrating the fabric, antimicrobial treatments for high food-hygiene-risk working environments, and in some cases specific heat protection certifications (EN ISO 11612).
Materials: The Most Important Decision in Chef Trousers
100% Cotton
Pure cotton remains the reference material in kitchens with high heat exposure for its behaviour in fire and heat: it does not melt, does not adhere to the skin and provides a genuine barrier against hot oil splashes.
Its operational drawback is that it creases more than blends, absorbs more moisture — which in hot kitchens can generate discomfort — and requires higher laundering temperatures to guarantee food hygiene standards, with greater impact on fabric wear.
Recommended weight: 200–260 g/m² for hot line kitchens. Below 200 g/m² thermal protection is insufficient.
Polyester-Cotton Blend
The technical blend — usually 65/35 polyester-cotton or 50/50 — offers greater thermal comfort and less creasing, but reduces protection against heat and splashes compared to pure cotton.
It is the most common option in cold kitchens, pastry sections, buffets and preparation areas where the risk of exposure to extreme heat or hot oil is low. In kitchens with an active hot line, its use means accepting a reduction in worker protection that must be weighed in the establishment's risk assessment.
EN ISO 11612 Certified Fabrics
For high-risk kitchens, there are trousers made in fabrics certified to the EN ISO 11612 standard for protection against heat and flame. This certification guarantees the fabric meets minimum verified protection thresholds tested by specific procedures.
The Cut: Roominess, Waistband and Length
Roominess. Chef trousers must have a roomier cut than front of house trousers. The roominess is not a design flaw: it is functional. In a high-temperature environment, fitted trousers generate thermal discomfort and restrict movement. The baggy or semi-loose cut is the most common and most advisable.
Waistband. The fully elasticated or partially elasticated waistband with drawstring is the standard in chef trousers as it facilitates movement and adapts better to different waist sizes than a zip waistband.
Length. Chef trousers must reach the instep or cover it slightly to protect the ankle and foot from splashes. Trousers that are too short leave the ankle exposed; trousers that are too long create a trip hazard in kitchens with wet floors.
Food Hygiene: Laundering and Care
Wash temperature: 60°C as a minimum, 90°C for reinforced sanitisation cycles. The trouser fabric must withstand these cycles without deforming or losing its structure.
No fabric softener: fabric softener can interfere with the water-repellent finishes of technical trousers and reduce their effectiveness.
Frequency: in high-output kitchens, trousers may require laundering after every service. This means the minimum stock per chef must cover at least 3 cycles: one in use, one in the laundry, one clean and available.
